Chickpea Pasta with Mushrooms and Crispy Prosciutto

Boil a large pot of water and add drizzle of olive oil and pinch of salt. Add pasta and cook according to directions. Heat a small skillet to medium heat and add a pat of butter. Add mushrooms and sauté until liquids have been released. Season with salt and pepper. Remove mushrooms from skillet and add prosciutto, cook for a few minutes until crispy and set on paper towel to drain. When pasta is done cooking, reserve 1/4 cup of pasta water. Drain pasta and return to pot. Drizzle with olive oil and add Parmesan cheese, mushrooms, and salt and pepper to taste. Mix well and scoop into serving bowls. Top with red pepper flakes and crispy prosciutto.
