Hearty Bolognese

1. In a dutch oven or large pot, drizzle olive oil and add the diced pancetta. Cook over medium heat until slightly crispy about 3-4 minutes.
2. Add the diced onion, carrot, celery and continue to sauté until tender, about 8 minutes.
3. Add the ground beef, cook until no longer pink breaking it up with a spoon. Season with s&p.
4. Add in the garlic and let cook for about 2 minutes. Also add wine and stir.
5. Pour in the san marzano tomatoes with their juices. Mix well and use your spoon to break down tomatoes, they will continue to fall apart as the sauce cooks.
6. Add tomato sauce, another pinch of salt and pepper, thyme, and the bay leaf. Add you cheese rind here too. Mix well and cover with a lid, let simmer for 1 hr on low heat.
7. After 1 hr, remove lid and stir. Continue to cook for another hour with the lid off.
8. When ready to serve, remove bay leaf and toss. Taste and add salt and pepper if you think it needs it. Serve over chickpea pasta or zucchini noodles!
