An all time favorite! This recipe was made healthier over the years and is still a popular request. It features chicken breasts stuffed with a creamy, cheesy, and spicy jalapeño and bacon filling, then coated in GF panko breadcrumbs and baked.
Preheat oven to 400 degrees.
Butterfly and cut chicken breasts in half, making 4 thin cutlets. Cover with plastic wrap and pound thin.
In a small bowl add cream cheese, shredded pepper jack, crumbled bacon, and diced jalapeños.
Place cheese mixture in the middle of chicken.
Gently wrap chicken and insert tooth picks to hold them together.
Add egg, lime juice, olive oil, s&p to a bowl and whisk together. Place panko bread crumbs in a separate bowl.
First coat chicken in lime juice mixture then breadcrumbs.
Place rolled and coated chicken on a baking dish sprayed with nonstick spray.
Once all chicken is wrapped, spray the tops with non stick spray and season with s&p.
Bake for 30 mins & enjoy these crunchy, cheesy delights!
