Philly Cheesesteak & Veggie Skillet

Heat a large skillet (I used cast iron) to medium heat. Add your sliced onion & bell peppers and cook for about 5 minutes or until veggies are soft and have a little char. Add your avocado oil and continue cooking for a few more minutes. Season with salt and pepper. Remove from pan and set aside. Add zucchini to pan and cook for 3-5 minutes until soft. Season with salt and pepper. Remove from pan and add to peppers/onions. Next season your thinly sliced beef. Season with all purpose seasoning, salt and pepper. Turn your skillet up to medium high heat and add meat. Cook for 3-5 mins until no longer pink but not over done. Add veggies back into pan with meat and mix well. Top with sliced Munster cheese and broil on high for a few mins to melt cheese! Serve as is or with roasted potatoes, or a slice of sourdough toast like we did!
