Sweet Potato Burger Nachos

Roast the sweet potato rounds until crispy (or cook in the air fryer). In a separate pan, cook the ground beef and finely diced mushroom mixture. Top the crispy sweet potato rounds with the cooked ground beef and mushroom mixture. Sprinkle with shredded cheddar cheese and pop back into the oven to let it melt. Top with shredded lettuce, chopped tomatoes, and drizzle generously with Primal Kitchen special sauce. Optionally, add Bubbies Pickles fermented pickles and pepperoncinis for extra flavor and spice.
